Spicy Pork Tenderloin

This is an easy and delicious recipe that is pretty cheap. It uses this spice blend but any Italian blend will work well.

Spicy Pork Tenderloin

1 Tbsp Italian Heat Spice Blend
1 Tbsp Garlic Powder
1 Tbsp Ground Coriander
2 tsp Salt
1 tsp black pepper
3 Tbsp + 2 Tbsp Extra Virgin Olive Oil
2 1/2 to 3 pounds Pork Tenderloin - the package will likely have two loins
  • Mix the spices thoroughly together in a small bowl
  • Using paper towels, pat the meat dry
  • Using a meat tenderizer or a fork, stab the meat all over
  • Coat the tenderloin with olive oil - about 1 Tbsp for each loin
  • Preheat the over to 400&degree F
  • Heat a over-safe pan, such as a cast iron skillet, on medium high heat. Add the remaining olive oil
  • Place the pork on the pan and sear each side. 2-3 minutes per side
  • Put the pan in the oven, cooking for 15-20 minutes, turning once halfway through
  • Let it rest for at least 5 minutes before slicing

If the tenderloin is covered with a white membrane, remove it carefully before starting with a sharp knife. Be careful!

It used to be recommended that pork should be cooked until the center is 160 F. These days, it is 145. Anywhere in between those temps works well in my experience. In my opinion 145 isn’t as good as 155.
