Minty Fruit Salad

6 bananas, peeled and sliced
1 pound strawberries, washed and sliced
1 fresh pineapple, cored, sliced and cut into chunks
2 oranges, peeled, sliced and cut into chunks
3 Tbsp fresh mint, minced
1 Tbsp fresh tarragon, minced - optional
Juice of 1 orange
1/2 cup water 2 Tbsp honey - preferably orange blossom, but any will do
1/4 cup lemon juice
1/4 cup pineapple juice
2 Tbsp flour
  • Cut all the fruit and place into a glass bowl
  • Mix the remaining ingredients together and cook over medium heat, until it is thick
  • Cool the sauce and mix it into the fruit
  • Refridgerate for about an hour

A pineapple corer and slicer is indispensable.

Any fruit can be added or used as a replacement.
