Rocky Road Candy

Another easy peasy recipe and similar to the chocolate peanut clusters recipe. Very similar.

This requires a double boiler and waxed paper. Oh, don’t forgot the wooden spoon.

Rocky Road Candy

  • Place waxed paper on a cookie sheet or large wooden cutting board and butter it
23 ounces milk chocolate
1 1/2 cups roasted salted peanuts or slivered almonds
1 cup mini marshmallows
  1. In the bottom of the double boiler, add water and heat to a boil.
  2. Add **half** of the chocolate in the double boiler
  3. Stir until it is completely melted
  4. Remove the double boiler from the heat.
  5. Add the remaining chocolate to the melted chocolate
  6. Stir until it is completely melted
  7. Add the nuts and stir well.
  8. Add the marshmallows and stir well.
  9. Use a teaspoon to turn the mixture into drops on the waxed paper
  10. Let them sit for about 4 hours to firm up

Notes

If placed in an airtight container, they can sit at room temperature for 3-4 weeks.
