Southern Baking Powder Biscuits
This recipe comes straight from an old cookbook no longer in print. It was one of my moms favorite cookbooks when we were kids. It was published in 1961 by a local newspaper in Hutchinson Kansas. Given that we don’t live anywhere near Kansas, I am not sure where she got it from. I should ask her.
This is a simple recipe, as biscuit recipes tend to be. The recipe below is unaltered, except for the instructions, which is rewritten in my own awesome manner. I am not sure if any copyright issue would pop up, but in the US, an ingredient list can not be copyrighted for obvious reasons. This recipe was submitted to the newspaper by Sarah Frisman of Inman Kansas.
Southern Baking Powder Biscuits
2 cups sifted flour1/2 tsp cream of tartar
1/2 tsp salt
2 tbsp sugar
4 tsp baking powder
1/2 cup shortening
2/3 cup milk
1 unbeaten egg
- Set over to 450 F
- Sift the first 5 ingredients together
- Cut the shortening in the flour mixture until it is coarse
- Add egg and slowly pour in the milk, and mix together
- The result should be a stiff dough
- Knead the dough about 5 times on lightly floured surface
- Roll the dough out on a floured surface to about 1/2 inch thickness
- Cut with 1.5 inch cutter
- The remaining dough can be collected, kneaded to together and rolled back out and cut.
- Repeat until there is not enough dough to continue
- Bake on a cookie sheet for about 15 minutes
These are super good.
4 tsp = 1 tbsp + 1 tsp
This is for fried chicken recipe that I will be posting after I have perfected it. It is a little off and not up to my usual high standards, they are high, right?
I wonder if there are any small town papers still publishing cookbooks like this today? I would guess no, and that is sad.
