Honey Garlic Chicken
1 1/4 lb(~580 grams) chicken, light or dark, cut in large chunks1/4 tsp black pepper
salt
2 minced garlic gloves
4 diced onions
- Mix the chicken and pepper and sprinkle on a small amount of salt
- That amount of chicken is 2 breasts. Thigh meat probably doesn't need to be cut.
- On medium heat and with about 2 Tbsp of oil, cook both sides until brown and cooked all the way through
- Add the garlic and onions, cook, stirring often for about 2 minutes
1/3 cup + 1 Tbsp honey
1 Tbsp apple cider vinegar
1 tsp red pepper flakes
1/2 Tbsp cornstarch
- Mix the rest of the ingredients in a small pot
- Simmer until thickened
- Place the pan with chicken over medium-low heat. Pour the honey mixture and mix until heated
Serve with rice and steamed vegetables like carrots and sweet peppers. Serves about 2 people.
If you like, you can omit the cornstarch from the sauce and coat the chicken with it, cooking the chicken in more oil. The honey will stick a little better.
