Grilled White Fish
Any white fish should work well, but this is best with red snapper or grouper. IMO, grouper is the superior fish, both to catch and eat, but red snapper is great also. If neither is available cod, pollock, sole works well. It is a little stronger tasting, but halibut is great in anything.
Grilled White Fish
4 red snapper or grouper fillets 4 to 5 ounces each1/4 cup grapeseed or olive oil
salt and pepper
- Brush fillets with oil and sprinkle with salt and pepper
- On medium heat on a stove, or medium coals on a grill cook 10 to 12 minutes
- Cover the frying pan or close the grill.
- They are done when they turn opaque and flake easily with a fork.
Notes
This recipe goes great with these vegetables.
You can also test if they are done when the internal temperature reaches 145 F.
If you use thinner fillets like sole or thicker like halibut, especially halibut steaks, adjust cook time accordingly.
