Blackened Seasoning

There is nothing in blackened seasoning that makes things black. It refers to a cooking method that would don’t have to use if you don’t want to.

It involves searing the food coated in the seasoning in a cast iron skillet. It does generate a lot of smoke.

There are plenty of blackened seasoning mixes in stores but making your own is cheaper and you can control the ingredients, both quality and quantity. Most commercial mixes are loaded with salt.

If you like, you can mix the spices in a blender or spice grinder to make everything the same size but is not important if you do not. This recipe makes enough for several meals.
