This starts from pre-packaged bean soup mix found in pretty much any grocery store. I use a 15 bean soup mix with Cajun spices included. Use whatever is available.
This is typically cooked in a slow-cooker, but can also be pressure-cooked in a Ninja Foodi. Any large pressure cooker is suitable.
This is a quick and easy, and somewhat healthy meal and a great alternative to ordering out for unhealthy food yet again.
It is very inexpensive also.
Ninja Bean Soup1 20 oz package of 15 bean soup or whatever mixed bean soup you like.
Set aside spice packet.
The night before, rinse the beans, cover with water in a large container and cover container.
1 pound ground turkey, chicken or beef.
1 28 oz can of crushed tomatoes
1 tbsp chicken or beef base
8 oz mixed frozen vegetables
- Drain and rinse the beans one more time.
- Place the beans in the Foodi.
- Add enough water to at least cover the beans but no more than at the 10-12 cup line.
- Add the spices from the packet along with the tomatoes, base and vegetables.
- Make sure that the water level does not go past the max pressure cook line.
- Add in the raw ground meat making small balls.
- Set the Foodi to low pressure and 5 minutes
- When the pressure cooking is complete, vent and remove lid.
1/2 tbsp corn starch
1/2 cup water
Mix the corn starch and water, pour in the pot.
Set to saute and cook until it boils and slightly thickens
That is all there is to it. Of course, whatever spices you want to add is just peachy.
Since there is so much water in it, it will take 15-20 minutes at least to get to full pressure.
If you thicken it, leftovers will get very thick after sitting in the fridge. Just add a bit of water.
A bit of habanero sauce mixed into the bowl really kicks it up a notch.
