This is a light cucumber and tomato salad with a bit of a kick.
It is not too spicy, my son-in-law could mostly handle it, and he can not tolerate anything other than mildly spicy.
1 pound cucumbers 6 cherry tomatoes Peel the cucumbers and slice into small strips Cut the tomatoes into quarters 6 minced garlic cloves 3 green Thai chili peppers 1/4 cup fish sauce 2 Tbsp sugar Mix these ingredients in a bowl and add the cukes and tomatoes. Cover and place in the refrigerator for an hour or two.
Very simple and like my other cucumber salad recipe, the liquid can be reused for a while.
I tried to use my gadget that can make spaghetti like strings out of some vegetables, I thought it was too thin for this.
